Too tired to cook tonight!
As much as Nelson enjoys cooking and creating in the kitchen, there are times when his desire is just not that great. I can’t nor do I blame him. Stressful work days and the daily race to pickup the kids from their schools and get them to extra curricular activities can be draining. We don’t whine and complain, but some days our happy home cook needs a break.
Sometimes that break comes in the form of a delivered pizza or dinner out. We all like eating out on occasion, but many times, we’d still rather eat at home.
Simple dinner-in tonight
On this evening we had left overs that could satisfy all of us, but Nelson wasn’t feeling it. He had picked up some fresh bagels, cream cheese, and smoked salmon, and so this would become his dinner of champions.
I’m not sure if it’s officially a breakfast, lunch, or dinner meal, but I’m also not sure it matters. It was fresh, yummy, and simple. The perfect meal on this busy evening. It made Nelson happy. I think this is a great example of how a simple meal can still feel luxurious and special.
For me, I was a little excited because it’s rare that I get to shoot a dish where I don’t have to worry about it getting cold. As hobbyist bloggers with full time jobs outside of blogging, time is a luxury we’re not always afforded. You see, the meals we showcase on our blog are always our family’s meals too. We’ve gotten quite used to having to reheat our meals after a longer-than-expected photo shoot–it comes with the territory, but it’s not the best part of the blog experience. So this cold smoked salmon bagel was a treat. Well…it was until I realized that Nelson was hangry. I guess I couldn’t win this one today!

Bagel, Smoked Salmon and Cream Cheese Sandwich
Ingredients
- 1 poppy seed bagel
- 1/4 cup cream cheese
- 3 thin tomato slices
- salt, to taste
- freshly ground black pepper, to taste
- 100 g smoked salmon, thinly sliced (we used steelhead)
- 1 thin slice red onion
- 2 small sprigs fresh dill
Instructions
- Cut the bagel in half.
- Spread the cream cheese over the bottom of the bagel.
- Place the tomato slices over the cream cheese.
- Sprinkle the salt and pepper evenly over the tomato slices.
- Fold the slices of salmon over the tomatoes.
- Place the sliced red onion on the salmon.
- Place the dill and cover with the bagel top.
- Cut the bagel down the middle and serve. Enjoy!
