How hard is it make croissant-style crescent rolls from scratch?

The Joule® Oven app walks you through each step of the recipe with short video clips and text instructions. It’s brilliant!
In a nutshell, you prepare the dough, roll and fold three times for layering, cut, brush and bake. There’s only about 45 minutes of active (prep) time and the rest is waiting (and drooling)…in autopilot.

For this recipe, once the dough was prepped, The Joule® Oven Air Fryer Pro proofed and then baked the crescent rolls at two different temperatures without me having to do anything. Like magic! I could even monitor the status on my phone, from my sofa, while delicious aromas filled the house. Amazing, right!
It’s amazing because normally, without this oven, several steps would need to happen, separately, and there’s a lot more guess-work involved. I’ll take my Joule® over that, anytime, thank you.
Cooking with the app
The Joule® Oven app includes many recipes (some with the autopilot feature and some without). The recipes guide you through all the steps. Once you get the food into the oven, for an autopilot recipe, you simply press the autopilot button in the app within the recipe itself, and watch the wifi-enabled oven work its magic. The cooking conditions will change automatically, as needed, along the way. No fuss, no muss.
The Joule® Oven Air Fryer Pro was developed in collaboration with Breville and ChefSteps. These are two organizations that love to introduce efficiency and smart tech into everything they do. This oven is a beautiful culmination of all those things.
Are these croissants as good as traditional French croissants?
The short answer is, they’re incredibly delicious, but different from traditional Parisian croissants.
Croissant-style crescent rolls are softer on the inside, whereas Parisian croissants are flakier. Parisian croissants have more layers of butter and take a lot longer to prepare.
The delicious crescent rolls we made were ready to eat in about 4 hours, all in. That’s a whole lot less time than traditional croissants.

This was my initiation to crescent rolls, and the experience has proven how easy it is to make when you have the right tools. It’s given me the confidence to move up to more complex baking recipes. Croissant-style crescent rolls from scratch on autopilot using the Joule® Oven Air Fryer Pro (Recipe from the Joule app)
Ingredients
- 225 g cold butter
- 1 tbsp 10g instant dried yeast
- 2 tbsp 30ml warm water, 90°F
- 2 ⅔ cups 400g bread flour
- 3 tbsp 40g white sugar
- 2 tsp 10g kosher salt
- ⅔ cup 160ml iced water
- 1 tbsp 15ml water for the egg wash
- 1 large egg for the egg wash
Instructions
- Place the butter in the freezer for 10 minutes before slicing to ensure it’s super cold.
- Mix the yeast and warm water together to form a paste and set aside.
- Combine the flour, sugar, and salt.
- Using a dough scraper, very thinly slice the butter.
- Dust each slice in the four mixture to prevent it from sticking.
- Cut into thin strips and dust again with flour, then cut into fine dice.
- Add to the four mixture and use your fingertips to rub it in until it resembles coarse crumbs.
- Using your fingertips will help the butter stay cold.
- Make a well in the centre and stir in the yeast and water.
- Mix until the dough just comes together. There will still be some dry mix left in the bowl, and that’s okay!
- Keep your ruler handy! We’ve got to be precise here.
- Bring the dough together and turn it out onto a lightly floured surface.
- Flouring the counter prevents the dough from sticking and tearing.
- Press the dough into a 20cm x 28cm rectangle. Fold the dough into thirds.
- Give the dough a quarter turn and roll into a 23cm x 35cm rectangle.
- Lightly brush away any excess flour before folding into thirds.
- Give it a quarter turn again.
- Roll and fold again! Roll out into a 23cm x 35cm rectangle.
- Lightly brush away any excess flour before folding into thirds.
- This folding technique will give results similar to professional croissants.
- Cover and let the dough rest in the refrigerator for at least 1 hour to overnight, this helps make it easier to roll out.
- Keeping the dough cold will also maintain the butter and four layers.
- Whisk the water and egg together. This will add colour and shine to the croissants.
- Place the dough on a lightly floured surface and gently press to flatten.
- Roll out evenly into a 33cm square, using as little flour as possible. Brush away any excess flour.
- Trim the edges with a pizza cutter.
- Using a pizza cutter is ideal as it eliminates dragging or tearing.
- Cut the dough into 11cm wide rectangles then cut each piece diagonally into triangles.
- Brush away any excess flour.
- Lightly mist the dough with water. This helps the croissant stick together and hold its shape.
- Starting from the base, roll into a croissant.
- Line the roasting pan with parchment paper and place the croissants in the pan.
- Brush with the egg wash.
- Set the remaining egg wash aside.
- Insert the wire rack into position 7.
- Place in the oven and start Autopilot.
- When notified, gently brush the croissants with the egg wash. Return to the oven and bake.
- The croissants should be well browned and crisp. If not, give them a bit more using the “A Bit More” button.
- Remove and enjoy!
