Serves: 12 servings
Ingredients
225g (8 oz) goat cheese
2 tbs plain yogurt
1 tsp garlic powder
3 tbs fresh chives, chopped
½ tsp fresh ground pepper
12 plain crackers (if flavoured, make sure the cracker flavour compliments the salmon and cheese flavour... oh shucks, you'll have to taste test :-))
120g (4.5 oz) Smoked Steelhead Salmon (you can use other smoked salmon options, we just love the taste of this one)
Instructions
Add all but the crackers and salmon to a small food processor (a regular size food processor will also work)
Process until the cheese mixture is smooth.
Place 12 crackers on a plate.
Fold a thinly sliced piece of salmon in two or three and place on a cracker.
Repeat the last step for all crackers.
Using a teaspoon, spoon out a small portion of the cheese mixture.
Using a second teaspoon, spoon out the cheese from the first spoon. Repeat this until you've formed a tiny football shaped portion of cheese mixture.
Place the cheese portion on the salmon.
Repeat until all crackers and salmon have cheese.
Garnish the tops of the cheese with 1 inch lengths of chives. Enjoy!
