30 Minute Roasted Pork Tenderloin

This roasted pork tenderloin recipe is easy, quick, and perfect for a weeknight. This meat is full of flavour and juicy. It's a new favourite at our house!

Serves: 4 to 6 servings
  • 2¾ lbs whole pork tenderloins (2 pieces)
  • 1 tsp salt
  • ½ tsp coarse freshly ground black pepper
  • ½ tsp ground thyme
  • 1 tsp paprika
  • ½ tsp chili powder
  • 1 tsp garlic powder
  • 2 tsp vegetable oil
  1. Preheat the oven to 450 ºF.
  2. Place a cast iron pan in the oven on the middle rack while the oven heats up.
  3. While the oven heats up, mix all the spices in a bowl (not the oil).
  4. Place the pork tenderloin on a cutting board and coat the pork generously with the spice rub on all sides.
  5. Pat down the spices on the pork.
  6. Once the oven is ready, use hand protection and remove the hot cast iron pan from the oven.
  7. Drizzle the vegetable oil in the pan and swirl it around to coat the bottom.
  8. Place both pieces of pork in the pan and place the pan back in the oven.
  9. Roast for 20 minute.
  10. Carefully open the oven door and use a meat thermometer to test the thickest part of the meat.
  11. If the temperature has reached 140 to 145 ºF, remove the pan from the oven. Otherwise, let it cook for another two or three minutes or until it reaches 140 to 145 ºF.
  12. Remove the pork tenderloin onto a cutting board and tent with aluminum foil for about 10 minutes before serving.
  13. Cut the meat in thin slices and serve with your favourite sides. Enjoy!
