Garlic Butter and Wine Roasted Mushrooms on Cast Iron

This cast iron roasted mushroom recipe looks amazing, smells amazing and best of all tastes amazing! This is a perfect side dish for any grilled meat or vegetables.

Serves: 4 portions
  • 1 lb cremini mushrooms, washed
  • 2 tbs vegetable oil
  • ½ small onion diced
  • 3 garlic cloves, minced
  • 4 tbs unsalted butter, cut into 6 or more slivers
  • ½ cup good white wine
  • 2 tbs chopped Italian parsley
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  1. Preheat oven to 400°F.
  2. Heat cast iron pan on stove top on medium high.
  3. Once the pan is hot, add the oil.
  4. Add the onions, stir and saute for about 2 minute.
  5. Add the minced garlic and continue to stir for about 1 minute. (onions should look translucent)
  6. Add the white wine (it'll sizzle... this is good!).
  7. Add the mushrooms and stir to coat them a bit.
  8. Sprinkle the salt and pepper evenly over the mushrooms.
  9. Add the slivers of butter over the mushrooms.
  10. Move the pan from the stove top to the oven on the middle rack.
  11. Let it bake for 25 minutes.
  12. Remove from the oven and give the mushrooms another stir to coat the mushrooms well with the garlic butter.
  13. Sprinkle parsley over the mushrooms and serve immediately.
