Easy Oatmeal Dark Chocolate Chip Muffins

These oatmeal dark chocolate chip cookies are so delicious and easy to make! No mixer required and you're ready to bake in minutes. Perfect for breakfast on the run!

Serves: 12 muffins
  • 2 eggs
  • ½ cup vegetable oil
  • 1 cup milk
  • ½ cup packed brown sugar
  • 1½ cups flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ¼ cup white sugar
  • ¾ cups oats
  • ¾ cups dark chocolate chips
  • 1 tbs brown sugar for sprinkling the tops
  • ½ tsp cinnamon for sprinkling the tops
  1. Preheat oven to 425 ºF
  2. Add 12 paper liners to the muffin tin.
  3. In a medium bowl, whisk together eggs, oil, milk and packed brown sugar.
  4. In a large bowl, whisk together flour, baking powder, salt, white sugar, oats and chocolate chips.
  5. Add the wet ingredients to the dry ingredients and then the chocolate chips.
  6. Using a spatula, slowly combine all ingredients without over-mixing.
  7. Using a spoon, fill each paper liner to about ¾ full.
  8. In a small bowl, mix the 1 tbs brown sugar and ½ tsp of cinnamon.
  9. Using your fingers or a teaspoon, sprinkle the sugar/cinnamon mixture over the tops of the batter.
  10. Bake for 18 minutes or until a cake tester or toothpick comes out clean.
