Mmm… Moist Maple Muffins

Moist and delicious! It's hard to resist these simple to make maple muffins! Using pure maple syrup instead of sugar makes these muffins a perfect treat!

Ingredients
  • 3 cups cake flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tsp baking powder
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 2 cups pure maple syrup
  • 6 large eggs, room temperature
  • 1 cup sour cream
Instructions
  1. Preheat oven to 325°F.
  2. Place muffin liners in a standard 12 cup muffin pan. (We used parchment paper liners and love them!)
  3. Sift flour, baking soda and salt into medium bowl and set aside.
  4. In a stand mixer, beat the butter in large bowl at medium speed until fluffy.
  5. Slowly add the maple syrup and beat 5 minutes.
  6. Add one egg at-a-time, beating just until combined after adding each egg.
  7. Remove the bowl from the stand mixer.
  8. Add dry ingredients and mix gently with a rubber spatula until everything is combined.
  9. Mix in sour cream until well combined.
  10. Transfer batter to muffin liners until each one is ¾ full.
  11. Bake muffins for 40 minutes. Use a cake tester or toothpick inserted near centre to see if it comes out clean
  12. Let muffins cool in the pan on a cooling rack for about 10 minutes.
  13. Remove them from the muffin tin and let them finish cooling off on a cooling rack.
