Blender Coconut Ice Cream

Creamy, cold and delicious! This coconut ice cream is great on a hot summer day or any other time of year. It's easy to make in your power blender.

Serves: 3 servings or 4 smaller servings
  • 2½ cups coconut milk
  • 3 Tbsp pure honey (or maple syrup for a vegan version)
  • 1 frozen banana broken in half
  • 4 Tbsp shredded sweetened coconut
  • ⅛ tsp salt
  • 1 tsp pure vanilla extract
  1. Freeze half the coconut milk in an ice cube tray.
  2. In your power blender, add the non frozen coconut milk first.
  3. Then add the honey, shredded coconut, salt and vanilla.
  4. Add the frozen coconut milk cubes and banana.
  5. Set the blender to your ice cream setting (on high if you don't have this setting) for about 60 seconds.
  6. Pour the ice cream mix into baking pan (the size you would use to bake banana bread)
  7. Place the pan in the freezer and let it freeze for about 90 minutes.
  8. Remove the pan from the freezer and scoop out some deliciousness!
  9. Add a few sprinkles of shredded coconut over-top to make it even better.
  10. Enjoy this ice cream in a cone, bowl or mug.
If you plan on leaving the ice cream in the freezer longer than 90 minutes, make sure to take it out 15 to 20 minutes before serving to let it soften a little.
