Marinaded Pork Chops in a Pinch

A quick marinade for a delicious hot weeknight meal. These pork chops only sit in the marinade for a little bit but still take on a punch of flavour.

  • 2 lbs pork loin chops (about 12 small to medium chops)
  • Marinade:
  • ½ tsp course fresh ground pepper
  • 2 tsp sweet pimento paste (or hot if you like some heat)
  • 5 cloves of garlic minced
  • 1 tsp paprika
  • 1.5 tsp salt
  • 6 tbs fresh squeezed lemon (about 1½ lemons)
  • ½ cup of your favourite pilsner (white wine will also work nicely)
  • 1 tbs olive oil
  • ½ lemon (last step)
  1. Combine all the marinade ingredients in a small bowl and stir until the salt is dissolved
  2. In a large bowl, pour the marinade over the pork chops and mix until all the pork chops are completely coated. Let the pork chops sit at room temperature for 15 minutes (do not let the chops sit at room temperature for two much longer to avoid bacteria growth)
  3. While the pork chops are sitting in the marinade, start up the BBQ and let it heat to 450 degrees F
  4. Once the BBQ is hot, quickly place the pork chops on the hot grill and close the lid quickly to avoid loosing heat. This step is important. By using a hot grill you ensure nice char marks without over cooking the inside of the pork chops. Do not turn the pork chops more than twice to avoid drying them out.
  5. After about 2 to 3 minutes cooking each side, remove the pork chops from the grill, squirt fresh lemon juice overtop and serve right away with a favourite side dish.
