Use a hand blender to blend the sun dried tomato, mayo and garlic into a smooth sauce, in a small bowl.
In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, chili flakes and salt.
Toast the bread.
Now assemble the sandwiches. Brush the mayo sauce on the bottom slice, add the cold cuts, cheese, lettuce, tomato, onion, add the vinaigrette and top off with the last slice of bread.
Serve with pickles or other favourite sides. Enjoy!
