This roasted garlic mashed potato recipe is creamy, fluffy and amazing with the roasted garlic. This is a perfect side for grilled or roasted beef, chicken or pork.
In a large pot and add potatoes, coarse salt and enough water to cover the potatoes.
Turn heat to high and bring water to a boil.
Lower the heat to medium and continue to simmer.
Simmer for about 20 minutes or until you can easily poke through a potato with a fork.
While to potatoes are simmering, pour the cream, butter, remaining salt, pepper and roasted garlic into a small pot and set the heat to medium.
Bring the cream mixture to a light simmer and mix until the butter is melted and all the ingredients are well incorporated. Turn off the heat and set aside.
Drain the potatoes in a colander until dry.
Place the potatoes in a large bowl and pour the cream mixture over the potatoes.
Add the fresh chives.
Mash the potatoes with a potato masher. Mash until completely smooth or leave pieces if preferred.
Move the potatoes to a serving dish and serve hot.
