If you love waffles and bacon for breakfast, you'll love this recipe. we mix chopped bacon right into the batter. Delicious waffles and bacon in every bite!

  • 1 3/4 cups all-purpose flour
  • 2 tbsp cornstarch
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3 tbsp sugar
  • 1/2 tsp fine salt
  • 2 large eggs room temperature
  • 1/2 cup (1 stick) unsalted butter, melted but not hot
  • 2 cups buttermilk None at home? Use our homemade buttermilk recipe
  • 1 tsp pure vanilla extract
  • 12 slices cooked bacon chopped
  1. Preheat the waffle maker/iron (follow the manufacturer instructions).
  2. In a medium bowl, mix together the flour, cornstarch, baking powder, baking soda, sugar and salt.
  3. In another bowl, whisk the eggs and then add the melted butter, buttermilk and vanilla, and whisk again.
  4. Add the wet ingredients to the dry ingredients and mix with a spatula. It’s okay that the batter is a little lumpy.
  5. Add the chopped bacon and mix again until well incorporated.
  6. Pour 1/2 cup per waffle on the hot waffle maker and cook until the desired colour/doneness is reached (follow your waffle maker’s instructions). Ours took roughly 5 minutes per batch.
  7. Serve with fresh fruit and maple syrup, or any other preferred toppings.
  8. Enjoy!
Recipe Notes
  • Use about 1/2 cup of batter per waffle.
  • We used precooked bacon to speed things up.
  • Make sure to follow your waffle maker instructions
